The Syphon uses principles of expansion and contraction of water vapour to brew an infusion style coffee, filtering the grounds efficiently.

Step 1
Fit the filter to your top glass by dropping it in, pulling the beaded metal cord down and through the pipe and fixing it in place with the metal hook.
Step 2
Fill the bottom glass with water to the desired cup level. We use pre-heated, filtered water which is just off the boil to speed things along.
Step 3
Sit the top glass into the bottom glass and position the Syphon over the burner.
Step 4
Watch the water begin to bubble. Fit the top glass so that it is sealed to the bottom glass. This vacuum will cause the water to travel up the pipe into the top glass as it heats. When most of the water has transferred upwards, add your ground coffee and stir to fully saturate the grounds.
Step 5
Reduce the heat and stir; your brew should stay in the top glass.
Step 6
Remove the burner. Without a heat source, the water will filter back down into the bottom glass. Pour your coffee straight from the bottom glass.
